The American surname Fancher originated from the English surname Fanshawe, because of the English/Colonial pronunciation of Fanshawe as Fan-sher at a time when people tried to spell what they heard and spelling had not become standardized. There are many many documented spelling variants of Fanshawe/Fancher - but Faucher is not one of them. Faucher (Fouchee, Forshay)is a completely different family with no relationship to the Fanchers. Typically in documents, the handwritten letter u and n can look very much alike, so transcriptions of same invariably confuse those letters :) You would have to research your ancestor to determine if he actually belonged to the Fancher family - or the Faucher family. Then you can determine which documents have transcription errors. If you have already determined your ancestor was a Fancher, then the Faucher spellings are simply very common transcription errors; or someone's handwriting that formed an n to look like a u. (Looking at other handwritten words in the same document can usually determine this pretty easily.)
