Peter(?) Falcon and Panama Canal

I am looking for information regarding a Peter or Pedro Falcon. He would be my great-grandfather on my mother's side. I was told he worked on the Panama Canal construction, and was supposedly from New Orleans. I also believe I have discovered that he never married Marie Castille/Castillo, with whom he had two children: a son who died young and a daughter, Ana, who was my grandmother. If anyone has any info I would appreciate. My grandmother never discussed her life in Panama; I think because she was illegitimate. I am trying to determine if we are from the Falcons of the Canary Islands,(or anywhere else). I am not sure if Falcon was americanized from some other form. Thank you for any help you can provide.
