The Hans you're looking for was born 26 Sep 1591. Wife unknown. Had at least 4 children. Hans in 1621, Anna in1623, a daughter in about 1627 and Ulrich in 1629. It is thought that Hans' parents were Ulrich Eymann and Margaretha Pieri.

Your Hans might have been the Hans Eymann who was noted in "Swiss Anabaptist Refugees of 1671" in the January 1944 Mennonite Family History Magazine (I don't think I have a copy of that)
