Found the 1841 census you mentioned but could not find the family on the 1851 census.Bt 1861 my William Ewing was at Edinburgh castle serving in the regiment. He joined shortly before the 78th Highlanders moved to Montreal and then Nova Scotia.His service records have him mustering out in Montreal but we know he followed the regiment to Halifax because he was married there. His wife came for a prominent Nova Scotia family so that would probably explain why he had the regiment listed on his marriage record.The family immigrated to America around 1874 and are on the 1880 census for MA.
By my records Kate was only 16 when she married William.
