I know nothing further about E.J. Everett or his forbears, thought this certainly spurs me to find out! I'll let you know of any progress.
Do you have specific reference to the name Edward Jackson Everett? It would seem pretty unlikely that there should be two such names, especially as yours seems about the same time period. John Everett Millais was born in 1829, so I would guess that his father and E.J. Everett were born around the turn of the century (E.J.E.'s daughter Octavia, my gr-gr grandmother, was born in 1845, which made me wonder whether the story might instead refer to her grandfather - but E.J.E. may simply have been an older father).
Where did your Everetts live? I seem to recall that J.E. Millais was brought up in Jersey in the Channel Islands and then lived in Hampshire, which may be consistent with the west country origins of E.J. Everett and his wife.
