Fred,
I have looked at this census you refer to and although it does look as if the census taker missed crossing the "T", I think that this is "Scaling" as in "scaling timber." It was an occupation where older timber cutters walked through a stand of trees and estimated how much lumber would be possible from the trees to be cut. Then they or whomever they were doing it for would buy the timber "on the stump" from the owner.
