Have you checked the online Ontario 1871 census?

It only lists heads of households and "strays", so your Edward Sherman Etherington would not normally have been listed since he would have been a small child. However, there is a George Etherington, age 37, listed in Moulton TWP, who could have been his father. This is not near Essex but they could have moved. There are no Edwards and this is the only George. There is also a Joseph Etherington age 30 listed on the same page, same location as George, so they could have been brothers. Both were born in England.
(There are some Hetheringtons in Essex but none named George or Edward.)
