I can't really answer your Dutch 'spelling' question other than to say that 'Enos' was one of them. Thusfrom the will of Nicholas Enos [dated 20 April 1678 - he was descended from the Essex family], he left five pounds to his "Dutch cousin Edward Enos". His sister married a Drax and one of their sons, a Barbadian planter was said to be of Anglo-Dutch origin. There is a great deal of evidence for the presence of Flemish and Dutch clothiers in Essex [and Suffolk] in the 16th-17th centuries, including the occasional petition to have them removed, such was their impact.
I think you will find that Enness is the same name as Enos, Enowes, Innes etc., as you and others have mentioned. Spelling was not fixed and I have found that 3 or more variants of the same name in a single document is by no means unusual.
