Do you have the Intention to Marry Notice (ITM), as well as the certificate? Those are held at Wellington Archives and should tell you how long Thomas had been in the district at the time - could help in trying to find out when he came to NZ and how.
If he was 29 when they married in 1881, that puts his birth around 1852, not 1860?
