First, you should look at ancestry.com if you have not already, where there is census info for US.If you don't have or want a membership, see any good library.For example, I easily found some of your family in Minnesota in 1870 census and that someone worked in a general store (coincidently we had a general store in Missori -- see the "book" part of above web site.)
Key issue in going back from there is knowing Joseph's hometown in Germany. I was lucky to learn ours was Lamstedt, then made contact with someone who had access to microfilm of church records, which are maintained by the Salt Lake City organization.
You might find the town of origin in his immigration records. Then check with a library that has access to on-line German records (more expensive subscription than US-only and I don't have it.) Probably this would be Lutheran (Evangelishe) church records from the town/parish, at least that is what we used. Later when travelling to that town the local museum had hand written family trees where I also my ancestors listed.
On my web site the first two tree links at the bottom include our family in Germany. I checked and there is no "Joseph".
