Name change to ECHOLS from ECHOLTZ?????

I have a posting here about various Echols in GA, TX & FL but was just informed that the name was changed from Echoltz and that the earliest relatives were from Germany. Has anyone heard of this or is researching Echols that are really Echoltz? I assume most of the Echols here are from English stock, maybe I am naive. Thanks. Rick.
