I understand that it has something to do with the way "Dh" of "Dhu" etc is pronounced in the Gaelic. Thus it can be "anglicised" as Dow or Gow.
It may resemble the situation with the Chinese "Tao" which initially would be thought to anglicise as "Tow" (rhyming with "how" and "now"); but apparently is actually anglicised to "Dow".
Thus at one time in Edinburgh University, there was Francis Dow (my female cousin) and Francis Dow (an oriental gentleman).
You will also find "Dow" as the anglicised version of "D'Aoust" (French?) and apparently there are Lebanese Dows.
