Mary,
The Sorenson Molecular Genealogical Foundation (SMGF) is a non-profit research organization. It is completely independent from James Sorenson's commercial organizations, including Sorenson Genomics, which is a forensic, paternity and genealogical DNA testing laboratory. It is the continuation of a project started at BYU. However, they are not connected with the LDS church. In fact, it has been reported that some members were unconfortable with DNA testing.
Although private research organizations do not have to follow Federal guidelines for research on human subjects, SMGF voluntarily complies. As such, they must have an Institutional Review Board. They use the Western Institutional Review Board, which monitors those not required to have and IRB as well as some (universities, etc.) that do.

Thus, there is much more privacy protection than at a commercial lab. It is really over-protection, since there is nothing that a wrong-doer could do with the results. All of our project members have chosen to post their results on a public site with their full names for several years. Nothing has happened.
