The only derivation of the Diffey name I've found is French. One book listed it this way:
Diffey- see Dive
Dive- French- a personal name-see Deaves
Deaves, Dives- a location in Normandy
Fr.-Devis, a personal name

Another source listed :
Diffy, Diffay Fr. one who came from Defay (communal grazing land), in France; dweller in or near a place enclosed by a hedge
