Well, maybe I'm answering my own question here, but this might be an interesting piece in the dietz/deits family history.
In
The History of Ulster County, New York

I found a reference on pages 355-356 to the assessment roll for Marbletown NY for 1811 which lists Christian DEITS as one of about 30 families there. This is the town where we believe David Deits was born. In my original message (above) I showed data for Christian Dietz being the father of David Dietz, born in Eddyville (about 5 miles from Marbletown - and town names were quite fluid there at the time); this suggests to me that these are one and the same families and might even hint at the name change that persisted in our line from that date.
