Dietz or Dietze really means "of the people", a term describing a particular part of the original Saxon people. The name Dietz is found more often in the Netherlands from where many N.J. people emigrated.
The Dietze name appears in many cities in Germany and particularly in Saxony where my ancestors to 1500 AD originated.
Eastern Saxony was populated by Germans@1200 AD
