Guy,

The name Deese is probably an Americanization of Dees. I just got through downloading records from the Scots General Register Office. The spelling of "Deese" does not show up in the records, however, Dees, Deas, Daes, Dais, Dias, Dyas does show. The names Dees and Deas have numerous records.
As a point of interest, Emanuel as a first name, never showed up in any of the above names (I downloaded about 450 records).
Speculation has the name deriving from "Dee",
"dwellers on the River Dee". There are 3 Dee Rivers in the UK. Two in Scotland and and 1 in Wales.
U.S. records shows a Manuel Deas emigrating here prior to Emanuel Dee(s).
Also, English records shows several Dees(plural) being transported to the colonies as felons. Yep, England used the American Colonies as well as Australia for banning prisioners.
To answer your question.......no one knows for sure the origin of the name. Best bet is Scotland.
