According to some researchers, the name change from Deaton to Deyton was effected by the two brothers, Nathan and Eldridge, (sons of Captain William) who fled to Yancey County, NC after their father Captain William Deaton was killed in 1781 fighting for the British. They wanted to separate themselves from Captain William's Tory past because of the subsequent persecutions.
Other researchers have indicated that William Deyton, Nathan's son who was in the NC Legislature (1834-1835) introduced a decree to effect the name change. This decree remains apocryphal; however, there are documents with the spelling Deyton existing before 1834. Contact me via e-mail for further information.
