Deanda-Hinojosa in Corpus area

I'm not descended from Deandas, but from Hinojosas who married into that family--twice. Antonia and Tiburcio were children of Tiburcio Deanda Sr and Petra Lopez. I have questions about how you know their dates of birth.

Antonia Deanda married Adelaido Hinojosa on Nov 20 1899 in San Pat Co. According to death certificates (notoriously incorrect most of the time), he was born Jan 15 1877 and died Aug 2 1956. Antonia was born 1871 and died Jul 26 1946. I notice that James has a specific birthdate for Antonia (Sep 8 1872). How do you know that?

(Jose) Tiburcio Deanda married Angelita Hinojosa on Nov 27 1895 as stated in above post. Their birth dates are what confuses me. I have both of their death certificates (from the Sinton court house) and the dates seem ten years off. Tiburcio's says he was born Nov 11 1886, but I also figured it must be 1876. My question, again, is how do you know the 1876 date? Tiburcio died May 9 1955 and Angelita died Nov 18 1942.

I'm descended from Adelaido and Angelita's brother Jorge/George Hinojosa.

Any further info on these two Deanda's children will be helpful, as well. Thank you.
