Your French is better than mine; not being Canadian, I never had to study it. A short search of the internet shows that you're right: the accent merely shows the e is pronounced "ay" instead of "uh." And I think the "au" in Vaux is close to the 2nd vowel evidenced by spellings like Devoet, Defau, Dayfoot, Diefuh, etc. But I don't know how you'd get "The" from "Des," and in 100 years of church records in Missy (1608-1709), the surname Thevoz is always spelled just that way (or occasionally Theuoz, Tevoz, Teuoz, Tiuoz, Thevou, Theuou), never with an initial D. Illiteracy doesn't explain it because these were educated people, including judges and other local officials.
