Even if all the records are correct, he could have married Eunice in 1727 if he was baptised as an adult in 1719.Since it isn't my line, I didn't check all the records.
Jonathan and Mary(Bigalow)Cook also had a son Luther born at Douglas in 1764. You have probably already found good information on Jonathan's land records in Douglas, so I won't repeat them.As far as Westborough or Truro records go, it would be tough to avoid pouring over them if you don't know where Cornelius Cook was between 1701 and 1727.You will likely find something which will lessen the mystery to you.
