Couwenhoven>Covenhoven>Conover - how did this happen?

I can follow the logic from the Dutch Couwenhoven to Covenhoven, but how in the world did Covenhoven morph into Conover?

Anyone out there who has a collection of Covenhoven/Conover family material relating to Montgomery Co., NY? I'm trying to find a Henry Covenhoven/Conover, born abt. 1836, who married Mary M. Kring, born 1836, of Palatine Bridge. "Henry" may have been a first or middle name. Need Henry's full name and his marriage date/location to Mary Kring. Thx.
