For your Irish origin, the best place to go is the Irish Family History Foundation (IFHF).

The IFHF is compiling an online database of b/m/d data from parish (all faiths) Irish records. It has over 6,000,000 records so far. However, not all counties have put their records online. Its website is at http://brsgenealogy.com/. Records are available for Roscommon and part of Galway.

Catherine is one of the most common forenames in Ireland. You have a good chance of finding the birth/marriage records of your ancestors at minimal cost with info you have.

Also, the Aussies kept good records of ship arrivals, passenger names, and ages. Since you have a ship name, they should be able to find the data you want. The aussies are also keen on genealogy. I understand they make extensive information available at low cost.
