I was at a branch of the Archines Nationales du Quebec in Hull QC and they had a birth, death and marriage register for St. Paul's Church in Aylmer. For the marriages I was looking for, the register listed the names of the bridge and groom, both sets of parents as well as the county in Ireland where the bride and groom came from. I'm sure wherever you're looking similar registers must exist.
