I presume that Thomas is son of John Evans sister. I do not find any Coffey/Evans connection in OK, but do find a couple of longshots for you:

Hiram Kinzey Coffey married Mary Ann Evans in Maries Co., MO. I don't have a date of marriage, but Hiram was b 1862 in Maries Co., and d 13 Nov 1925 in that county. Mary Ann was the dau of Jesse and Nancy Evans. They were married on 13 Jun 1825, and had children William Sydney, Earl, Sherman, Jesse, Thomas, Lennie G., and Lizzie.

I also find a marriage for a Leander Coffey to Carrie Evans 22 Oct 1905 in Perry Co., MO. I have no information on their subsequent children.
