I guess by "colour upon colour" you mean the "azure an eagle displayed gules". That sounded bad to me too but was the way the blazon read that I copied it from.
Thanks for the description of the ancient arms of Wyrick. That does make sense of the crest with the two swords.
What you are describing as "as a centre-shield", I think you probably mean to blazon as "on an inescutcheon overall".
