Hi Kathy, This is true about the coat-of-arms. I hesitated, at first, to post anything else about the Malet coat-of-arms, since as you stated, they can vary, or even be altered; especially, when you're talking about younger sons, which are marked by marks of cadency and when you're talking about collateral branches, who will have different coats-of-arms. "The Complete Peerage" is separated into volumes like an encyclopedia. I will try to find which volume "Malet" is under, provided that the Malets were a titled noble family because if they weren't, then they won't be listed in their entirety in the books. Here's the bibliographical information for Cokayne's "The Complete Peerage," it was published from 1910-1959 in London, England by St. Catherine's Press. There is a newer edition of the same work, that was compressed into like 9 or 10-volumes, but I don't have that bibliographical information with me, at present. You just look up the person's last name, or their noble title. I think the Malets were titled nobility. If they were they are most likely to be listed under the volume that has "M" in it, then you just look up "Malet," and it will give you a detailed history of the family and hopefully, include William's coat-of-arms.
