Undifferenced is the Arms as granted to the original grantee and used by the eldest sons thereafter. Differenced are the same Arms but with an additional charge or "mark" to show that the holder is not the "head" of the family but of a cadet branch. In practice all do use the same Arms because after time the accumulation of cadet marks becomes a real mess and so tends to be ignored.
