"Explaining" COA

Hello-

Okay, about a year ago, I drew my COA, and it turned out rather nicely- I would like to know where the "start" of "explaining" the argent, fess, etc. begins. I would like to interpret it and publish it with my COA, but I don't know where to begin. Does it start in the middle, left to right, or ???

I have a platform that my entire picture stands on. On the left, if you are looking at it, there is a white horse that is standing on two legs holding the shield with his forelegs/hoofs, on the top left corner. In between his forelegs is a tall wire whisk (My husband and I are chefs)that stands a little taller than the shield. The handle touches the platform. On the shield, the two colors are vertical, dividing the shield in two, on the left side is blue, left side is black. In each of the top corners, is a star, equaling two. In the middle, there is a sun/moon duo, and what this represents to us is the two stars, our children, and the star/sun/moon black/blue, motif means that we are in the hospitality business, day and night. At the bottom, where the shield touches the platform, are two oak leaves, one green, one brown, and an acorn.

The guardian on the right is of a celtic dragon, he's green, also rearing up, and his forelegs/feet are also holding the shield, on the right corner. In between his forelegs, a chef's knife. (Wire whisk because I'm a Pastry Chef, my husband, a specialist in meats, so he gets the knife). The blade point touches the platform. Okay, if this is clear as mud so far, here is what is I guess, where the helmet should go, resting on top of the shield- I have a chef's toque (hat), which is white. The colored "mantle", I think it's called, is black and blue.

I have managed to not only draw it for letterheads, I've also drawn it in the center of my genealogy chart in the dining room, and drew it on a white sheet, embroidered it and turned it into a quilted wall hanging. I'm into Celtic design, and I have things in threes, symetry, etc. I have looked in books, online, etc., and I get confused as to where to begin even defining this, I'm assuming the language is Latin? (You should have seen the local librarian's face- and she's supposed to be a pronounced "expert" in this field, or so she said....) LOL

I have consulted this forum before with fantastic results, and am hoping for a good answer on this. I am trying to get my digital camera to work, so I might be able to get an actual picture to you, if need be. Thanks in advance.

PS- I don't know why people would want to buy their "COA", I had a great time creating my own, and the problem was, I had too many ideas, and so much space!
