The 1900 census of East Mauch Chunk, Carbon County shows Catherine was born in NJ and her parents in PA. The 1910 census of Mauch Chunk (both are now the town of Jim Thorpe, PA) shows the widow Katherine Fahl (misindexed as Bahl) as born in NJ. Her children Arthur, Annie, Mary and Doris are with her. The 1920 census shows her in Philadelphia with her daughters Mary and Doris. The 1930 census shows her in Glenolden, Delaware County, PA with her son-in-law and his wife Ellwood and Mary Hunt. All three censuses 1910, 1920 and 1930 show her father born in NY and her mother in PA.
The 1880 census of Easton, Northampton County, PA show a Kattie Clark 13, born in NJ, as the daughter of Edward 39, born in NY, and Louisa S. 36, born in PA. The 1870 census of same shows the same data.
Coincidentally in the 1900 census two houses down from Charles and Catherine Fahl is Louisa Clark, born in June or Jan 1846. She is still married and no sign of Edward. The 1910 census of Mauch Chunk shows a Louisa Clark by herself and still married. Both the 1880 and 1900 censuses show Louisa's mother born in Vermont. I could not find Louisa after 1910. She could have remarried.
Based solely on the fact that Louisa's mother was born in VT I found a Louisa Shannon 4 as the daughter of David 40 and Catherine 40, born in VT, in the 1850 census of Easton. It is a long shot and may or may not be the right Louisa. Louisa and the same parents can also be found in the 1860 census in the same place. The 1870 census of South Easton shows a David and Catherine of the right ages but the children do not match, however, they may have been grandchildren.
The best thing you could do would be to determine when and where Charles and Catherine died. Their obituaries could prove very helpful. For Delaware County check with the Delaware County Historical Society and the Delaware County Archives. Her death certificate should have her parents.
For Carbon County check with the Carbon County Archives for a death record or estate file for Charles. Their children may have had guardians appointed if they were to inherit anything while minors. The Dimmick Memorial Library in Jim Thorpe has mostly just microfilms of newspapers, but without an exact date it will be hard to find Charles' obit. If he died after 1905 the PA Dept of Health would have his death certificate. The Lehigh County Historical Society has some records of Carbon County.
For Northampton County the Marx Room of the Easton Area Public Library has an excellent selection of records.
