Kristin, on the Churchills, the web site that you've supplied contains a mix of fact and fancy, unfortunately without sources cited for such things as Josiah's alleged birth and arrival in America. A separate response by DW Churchill discusses the burial location of Josiah in detail. Newington had its first settlers between 1682 and 1684. The first Churchill to settle in Newington was third generation Nathaniel in, probably, 1709. There seems little reason to doubt that Josiah was buried in Wethersfield.
As for a Churchill connection to your husband's Spencer name, I have looked in the index of "Churchill Family in America" and discovered that no Spencers are listed for the Connecticut Churchill section. Thus, there were no known marriages to Spencers by those listed in the book. There also are no Connecticut Churchills listed whose first name was Spencer. However, I don't find your husband's great grandmother listed. I wonder if she could be the one who married a Spencer. I'm doing this from memory, because I'm afraid I may lose this message if I go back to your original posting, but didn't you say that your husband would have been Spencer IV? That would seem to mean that his great-grandmother's husband was Spencer I, if there's a Churchill connection at all. Of course, with eight great-grandparents there are six without a Churchill connection who are potential sources for the name.
I hope some of this helps.
Malcolm
