The Y _DNA will tell you exactly waht your ultimate paternal line ancestry is. It wont look at any of your family lines given to you by your mother, nor will it tell you anything about the family lines of your paternal grandmother, thats Larry's mother.
But it will tell you ultimatley where the fathers line of Larry Chism came from , especially within the past 10,000 years since the last ice age. For people with the names of Chism ,Chisum,Chisolm Chisholm, plus a few other variants, it will tell them which American families they may be related to, as many American with this name have ancestors with this name who came to America in the 1700's before good record keeping was in common practice, therefore they have only a broad idea that their ancestry was somewhere in Scotland. A Y DNA test will tell you if you belong to the majority group of Chisholms who have a Norse Viking ancestry, and have lots of genetic family connections to other people around the world, descended from the same Viking families but in the times before surnames were used.
On the other hand it may reveal that your ancestral family were already in Britain before the Romans arrived, and it may show you other Chisholms with the same type of DNA., these will be Chisholms who will be descended from the smae ancestor as Gary. Your son will pass this exact information on to his son, and so on for ever, it cannot be escaped. Often there are problems in this type of genealogy because people may be in a similar position to you,but they were not told of it and so it comes as a shock when the DNA is something totally unexpected. It also is more common that such an occurence has happened in previous generations, not the immediate generation as in your case. But even though you were not raised as a Chism, you will always be one as the DNA will show. None of this will take away the significant role and honour of your Stiefvater, its just something additional you can take on if you wish to.
