Your Bessie may be the granddaughter of Stephen Chipman, who was b. in Johnstown, Leeds, Canada West (Ontario) in 1805, d. at American Fork, UT in 1868. He was a Mormon, and an early settler in the territory (1847).
He had five sons, three of whom are candidates for the father of your Bessie (sorry, that doesn't sound right does it?)

Washburn, b. 1829 in Canada, had 18 children, one of whom was an Elizabeth

William Henry, b. 1836 in Canada, d. American Fork 1872, had 24 children, including Ida Elizabeth (b. 1870) and Eliza (b. 1874)[these are likely to be too young to be your Bessie]

James, b. 1839 in Far West, MO who had a mere 16 children. By his first wife, Sarah Green, he had four children, including a Betsey (no dates given).

The Burt Lee Chipman book has pictures of Washburn, James and their brother Stephen D. There is no mention of Richard Bates Preston.
