Mary Joanna/Jeanne Charbonneau/Cole b.1855

Trying to find the parents of Mary J. Charbonneau/Cole. All I know about her is this:

Married before 1877 to Peter Strack (of the Clinton Co, NY Stracks). Not sure if they married in NY or Canada. One dau Elizabeth/Lillian bapt. at Redford, Clinton Co, NY 1877. One son, Eli Andrew Strack supposedly born 14 Aug 1879 in Chateauguay, Franklin Co, NY.

Mary & Peter probably divorced. She is on the 1900 Providence, RI census as Mary Cole b. Mar 1855 Canada. Son Eli was also using the last name Cole at that time. She is listed as a widow, but Peter Strack is alive & well and remarried in VT.

I can't find Mary Cole on later census records. Both her son and dau died in Los Angeles (1947 & 1949). I have checked the Clinton & Franklin Co NY record books that I have been able to find. There was one entry for a "Joannes Cole" 22 June 1855 (birth?) 24 Sept 1874 (bapt?) at St Edmund parish Churubusco, Clinton Co, NY. Noted on the record are (parents???) Joannes Cole & Marie (Barry/Barie). It is possible she was baptized in order to get married???

One other entry in the same book has a Gulielmus Cole born or bapt 8 Jul 1879 to Georgius Cole & Agnetia Lavigne. I'm sure the spellings are guesses. Anybody heard of this branch of the Charbonneau/Cole family? Any help would be greatly appreciated.
