I'm trying to figure out the maiden name of Harriet Stinson Ohaver Roy, and where in Kentucky she was from. What was the name of her Stinson husband?

Mrs. Harriet Stinson married Frank Ohaver in 1848 in Crawford Co, MO. I think that this is the family in 1850.

1850 United States Federal Census
Dist. 24, Crawford Co, Missouri
F Ohaver 33 m farmer MO
C Ohaver 26 f KY
H Ohaver 9 f MO
J Ohaver 12 m MO
J M Ohaver 7 m MO
J Ohaver 7 m MO
M E Ohaver 5 f MO
D h Ohaver 5 m MO
L Ohaver 4 m MO
I J Ohaver 1 m MO
B F Ohaver 1 m MO

I can't find the family in 1860, but by 1870 it looks like Frank had died and Harriet and some of her children were living in Lawrence Co, MO.

1870 United States Federal Census
Pierce City, Lawrence Co, Missouri
Harriett Ohaver 44 f w keeping house $0r $100p KY
Nancy Ohaver 18 f w MO
Lewis A Ohaver 21 m w day laborer $150p MO
Rutha A Ohaver 15 f w MO

Sometime before 1880 Harriet married Asa Roy and was living in Newton Co, MO.The step-daughter is actually Harriet's granddaughter, daughter of son Lewis and an unknown wife.

1880 United States Federal Census
Shoal Creek, Newton Co, Missouri
Asa Roy w m 47 miner IN KY KY
Harriet Roy w f 53 wife keeping house KY KY KY
Sarah A Ohaver w f 9 step-dau MO MO MO

Living next door is James M Stinson, Harriet's son from her first marriage.

James M Stinson m w 37 miner MO KY KY
Sarah L Stinson w f 27 wife keeping house MO -- MO
William I Stinson w m 11 son MO MO MO
Eliza J Stinson w f 8 dau MO MO MO
Robert H Stinson w m 6 son MO MO MO
Charles R Stinson w m 4 son MO MO MO

Harriet died sometime before 1900 when Asa is shown with a different, younger wife. I haven't found any of the others in later census records for sure.
