You will find the place name Stenstrup both in Præstø and in Sorø counties, which counties are both on Zealand. Kongsted is also found in both counties, so in which of them is Peder buried?
I tried to find Peder's birth in Øster Ulslev parish, which is in Maribo county, but couldn't find it. I used the following site with church books (kirkebøger) and censuses (folketællinger): http://www.sa.dk/content/dk/ao-forside/find_kirkeboger#. You just need to fill in county (amt) and parish (sogn)- (herred = district).
Are you absoloutely sure about the approx. birth year?
The closest I come with a Peder Sørensen born approx. 1841 is this 1845 census from Steenstrup. Could perhaps be him with parents and brothers - it's from http://www.ddd.dda.dk:

On Arkivalieronline (see above), Præstø county, Hammer district, Rønnebæk parish (1814-1856), you will find a Peder Sørensen born 10 Feb 1841 to Søren Olsen and Maren Kirstine Torkildsdatter. Opslag 47 (numbers on left side when in the church book). Could be him?
