As near as I can tell, William inverted his names, and went by Jared; fairly common (and frustrating) actually. The 1895 directory for Seneca Co. had entries:

Newman W. Jared, p o Romulus, r 45, b 1835 m Derby,
Northumberland Co., N. B., w Alice S. (Stevens), vineyardist,
has grapes 3 acres, 5 acres other fruit, has 1 horse,
1 cow, apiarist 6 colonies

Newman Wirt K., p o Romulus, r 45, b 1878, student and far
mer for his father W. Jared, owns an undivided interest in
the farm estate of George Stevens, 65 acres
