Spelling difference for CAVES and CAVE

I am interested in finding how the difference between the name CAVE and CAVES came to be. I know that this difference had to happen before immigration to America. As there are CAVES and CAVEs in England as well. The Immigration department, when it was on Ellis Island, was more notorious in misspelling the non-English immigrants. If you have information about the Anglo-Norman origins of the name post here and e-mail me.
