Cattell in York 1811?

Puzzle waiting to be solved

The Cattle family 1720 onwards was previously known as Cattell.

In York however there appeared a family called Cattell in the 1800 to 1850 period.

William Cattell appears in about 1809 taking a Shop in Stonegate and trading as a Jeweller. He is married to Sarah (sometime and somewhere??)

Mrs Sarah Cattell dies in 1842 in Bootham after running some sort of School. Her Will ( probate in London??) says her husband William
had a brother Joseph and his wife Mary (still alive in 1842) who had a daughter Sarah and a deceased Daughter Elizabeth.
William also had a sister Jane deceased by 1842 but she, Jane had had a daughter Jane still alive in 1842 but now married and possibly as Jane Ford?? But spelling not sure?.

William Cattell the jeweller died in 1830 York buried St Olaves and aged 56 ie approx born 1774.
Sarah Cattell Wife died 1842 aged 71 ie born approx 1771. she also buried st Olaves York. She had a cousin Jane ?? then wife of George Ellis of York and a cousin Mary who had a brother James Barrwick

The records (Trade records) also show two other Cattell names in York.
Christopher Cattell was a dance teacher in York , Barker Hill, in 1823 and some record I have lost says he may have died in an Asylum??

George Cattell appears as a trunk maker in Goodroomgate in 1820s-40 with the same Cattell name?????

The mystery is too complicated to fully explain, but William’s appearance in York to set up this Jewellers shop in 1809-1811 is a clue.

Where was William born and who were his parents, equally who were brother Joseph’s parents.?????????????

William bought his freedom to trade in York but may have had a silversmiths training elsewhere??? London Sheffield or Birmingham???? Or York??
The big question is ???
was William and Joseph’s father called William or Joseph??????????????????????? From where
There are a number of options if yes.... but which???????
