Dear James,
I googled Bishop Edward McCabe and got some good hits. His date of birth was Feb. 14, 1816. The Archdiocese of Dublin should have dates of baptism. His ordination as priest and his consecration as bishop are in the articles I found. Here they are.

This one is the Archdiocese of Dublin's page about him. It has a photo, some photos of his cardinal's biretta and his papers. It you go to their homepage, you can find out who should be contacted for their archives. You can ask the archivist about his date of baptism and other family members.
