"Bound to" means that the girl was probably an orphan, and Matthew agreed to take financil responsibilty for her and see that she was properly provided for and taken care of (kind of like being appointed a guardian). She may even have been taken in by Matt & Margaret if her mother was also deceased. One of the usual obligations of having a child bound to you was to teach the child some skill or trade by which they could support themselves once they came of age. Girls were usually taught the "trade" of "housewifery". Since there was no welfare system at the time, orphans who were too young or adults who were too infirm to support themselves were usually "bound out" by the parish or "overseers of the poor" to someone who would assume financial responsibility for them.
I'm pretty sure that since Zach Estill provided surety for both Matthew's marriage and that of Thomas Ray, that Margaret was a Ray. Zach was Thomas Ray's step father-in-law.
