Joy,
It seems that most of the information still existing has been found relating to the Giles Carter. The remaining tool we have is DNA results. The likely descendants of Giles Carter Jr that I have been working on test as Haplo group R1a1a and the probable descendants of Theodorick are coming back as I1 (eye one)It is not possible for Giles Carter Sr. to have descendants in 2 different haplo groups. We are talking of Y-DNA that is only passed down to the male descendants. It goes from father to son like the surname and female descendants can not be tested for this. It remains relatively unchanged for hundreds of years with only a slight chance of a change in the numbers for each generation. The procedure is pain free and simple. What is needed is a male descendant of your Carter family that is willing to take the test. I would recommend a 37 marker test from Family Tree Dna.Do you know of a male descendant in your family?
Mike
