I'm really glad you brought this up because I've been looking into Jewish connections to my family/family name for a while.
My dad's family is from Northern Mexico -- Nuevo Leon as well! His whole life, my Dad has worn a Star of David. He says there's no real reason, I inquired about maybe there being a Jewish influence growing up but he grew up here in Texas, and as far as I know, his parents (who were from Nuevo Leon) weren't Jewish. But I think it's very interesting that he has this connection to the Star.
Just from a shallow/physical point of view, his side of the family does have what I would call Jewish features ( although I know there is no definitive "look"), but they certainly don't look Latino at all.
Hopefully the mystery of the Cantu Jews of Nuevo Leon will be solved! :)
