Possibly you are referring to Polydore Cardin (b. JUN1908) in the 1911 census of Drummond and Arthabaska, Durham Co. South, Québec. Keep in mind that dates-of-birth in census returns are often estimates.
He was the son of 'Israel fils' Cardin (OCT1878) and of Adeline Cardin (MAR1885). 'fils' means 'son' but in this instance would be equivalent to 'Jr.'. It should not be assume that a "Jr." was necessarily the son of a "Sr."; they could be uncle and nephew or even unrelated. in this case, however, Israel Cardin, Sr. (MAR1849) lived next door so I would strongly suspect that he was the father of 'Israel fils'. Israel the elder's wife was Osilie (JAN1851) and other children were Frederick (APR1892) and Euphemie (NOV1875).
It was the custom (and still is apparently) amongst the French (including Acadians) for the wife to be noted in census returns by her maiden name. this was not the case in 1911.

In 1901, in Drummond & Arthabaska, Israël Cardin (10MAR1850, which illustrates what I mean about birth-dates) and Osilie (13JAN1851) had Florentine (15DEC1882), Bernadette (12NOV1887), Osilia (?) (20APR1889) and Frederick (6APR1892). There was also an Israël Cardin (15MAR1885) in Sainte-Christine, Bagot Co., Québec living alone but I do not feel that this was the son.
In Drummond and Arthbaska in 1891 the image provided is a bit blurred so I may not always get the spelling correct. Israel Cardin was age 42 and Ozilie was $0. children were Eliza (19), Rosanna (18), Marie Louise (17), Euginie (16), Joseph (15), Alsidas? (son, 14), Heilline? (daughter, 13), Israel (11), Florentine (8), Virginia (6), Josephine? (5), Bernadette (3) and Aurelie (2).
in 1881, in Drummond and Arthabaska, they are Israel Cardin (31), Osilie (30), Eliza (9), 'Reosanna' (8), Marie Louise (7), Eugénie (6), Joseph (5), Alcidas (4), Hélène (3) and Israël (2).
In 1871 Israel (21) and 'Osalia' (20) have no children.
I do not have ready access to the 1861 census but in the 1851/2 census of Boucherville Parish, Chambly Co., Québec there is a family:

'F Varennes' and 'F Boucherville' are their places-of-birth, but I am not sure what the 'F' is for. note that Aglaée's maiden name is given.
