I have not had any luck regarding a marriage record for Mary Jane as such or as the daughter of WIlliam Henry and Emma. To me , the Mary Jane you have found as the domestic of two families may be the right one; also, if she was single at age 35 in 1911, this may be an indication that she never go married.

I have not looked at the censuses that your have mentioned but I did look at the Lovell's Directory for Montreal (Alphab. listing). Given the used the first letter of the given name of people, it is difficult to determine who were her employers. I have not found Mary Jane as such listed in the directory. The head of the family is generally the one who is listed. I am providing the link for you to do further checks.
