Cournoyer + Hus & dit

The use of Hus in place of surname or in combination example Paulhus or dit Hus instead of Cournoyer any reasons why ? also why the use of dit.

Claude Hus Millet 1703-1763 his father shows as Marc Antoine Hus mother Francoise Lavallee.

Also use of both Hus and Dit
Paul Hus Dit Cournoyer 1645-1734 France to Canada.

First time in 50 years I have worked genealogy in French speaking Canada.

Were people of those years illiterate ? I know some that came to USA could not speak English thus Pete Cournoyer 1829-1887 became Peter Cornia Canada to Utah.
