so far I have not found the family in 1851 but I did find a marriage for John in 1853 to Charlotte - he is a widower. If it had been a Catholic entry it would have shown his previous wife but this may help a bit

Quebec, Vital and Church Records (Drouin Collection), 1621-1967 about John Wilkinson
Name:       John Wilkinson
Spouse:       Charlotte Elizabeth Adber
Event:       Mariage (Marriage)
Marriage Year:       1853
Marriage Location:       Dunham, Québec (Quebec)
Place of Worship or Institution:       Methodist Church

Ont he 12th day of April, 1853, John Wilkinson of Farnham, yeoman, widower and Charlotte Elizabeth Adbert of Daunham, spinster , were after the due publication of Banns, united in Holy Matrimony in the presence of the subscribing witnesses by me J. Montgomery, Minister
John Wilkinson, Charlotte Addbert, Joseph G. Golland, Levinia Golland, levi Fraser, Rodney Holden, Thomas Wilkinson, J.C. Butler, William Wilkinson and Samuel Wilkinson

As the Wilkinson names all match with the brothers this does seem to fit

I looked for birth/baptisms of any of the children to prove they were children of John and Emma. I figured any born after 1853 would be John & Charlotte's but those born before 1853 should be Emma's.

I found a baptism of daughter Mary Ann, born Dec. 15, 1840, baptized Feb. 6, 1843, child of John an Emma

Quebec, Vital and Church Records (Drouin Collection), 1621-1967 about Mary Ann Wilkinson
Name:       Mary Ann Wilkinson
Event:       Baptême (Baptism)
Baptism Year:       1843
Baptism Location:       Dunham, Québec (Quebec)
Place of Worship or Institution:       Methodist Church

on same page is son Thomas Porter, born Nov. 5, 1839, baptized Dec. 6, 1843

Quebec, Vital and Church Records (Drouin Collection), 1621-1967 about Thomas Porter Wilkinson
Name:       Thomas Porter Wilkinson
Event:       Baptême (Baptism)
Baptism Year:       1843
Baptism Location:       Dunham, Québec (Quebec)
Place of Worship or Institution:       Methodist Church

Sophia was born Dunham, June 13, 1847, baptized July 25, 1847 - child of John and Emma Wilkinson

Quebec, Vital and Church Records (Drouin Collection), 1621-1967 about Sophia Wilkinson
Name:       Sophia Wilkinson
Event:       Baptême (Baptism)
Baptism Year:       1847
Baptism Location:       Dunham, Québec (Quebec)
Place of Worship or Institution:       Methodist Church

I looked for marriages for John's brothers William, Thomas and Samuel.

I found a marriage in Farnham that may be Thomas as the parent's names match what you have as does their place of residence in England.

Quebec, Vital and Church Records (Drouin Collection), 1621-1967 about Thomas Wilkinson
Name:       Thomas Wilkinson
Spouse:       Martha Owen
Event:       Mariage (Marriage)
Marriage Year:       1848
Marriage Location:       Farnham, Québec

Thomas Wilkinson, son of Joseph WIlkinson of Newark upon Trent, England and mary, his wife, widower and of major age was married after due publication of Banns to Martha Owen, spinster of minor age, daughter of Amos Owen and Sarah his wife, Oct. 9, 1848.

I haven't been able to find death of Emma though.

I also have not found John's brothers in any census yet, although all three of them were witnesses to his marriage to Charlotte in 1853 and Thomas was married in 1848 to Martha Owen

I just found a bit of info on Thomas and wife Martha, but will give that to you in a separate posting.

Carolyn L
