There was not a census on 1691 but in 1681.

Rene Jette made his book, since several researches about the French
Canadians in the Quebec.

All the catholic and civil registers were gathered of their births, marriages,
and deaths since 1635, until 1799 for the first part.

What is the name of your first canadian ancestor ?
