You're right about Mary being widowed. I checked that page of the 1881 census, and she's listed as such specifically. So her husband Patrick must have died before 1881.
(I haven't found anything further on their daughter Mary, though, so I guess we can only assume she died before 1881.)
On the 1891 census, in Lot 38, Mary isn't listed -- just her three kids. I thought for a while this meant she had died also. But then I saw your message, and with that new information I started looking for her elsewhere.
I still don't know where she was in 1891 specifically, but I do know that she and her son Patrick ended up moving to Boston along with son John and daughter Catherine Ellen.
***Patrick got married in Boston in 1895, to a Boston native named Emma Carroll. He died of TB in Boston in 1917, age 44.
***Mary Collins/Doyle died in Boston in May 24, 1908. Her death record says she was 53 at that time. Her husband is listed as Michael Doyle, birthplace as Charlottetown, father as John Collins (born in Ireland) and mother as Catherine Lynde (born in Ireland).
Looking up John Collins and Catherine Lynde (also spelled Lynn, Linn and Lunn) I was able to find that Mary was born on PEI in 1850, and that she had at least these siblings: Elizabeth (1851), Patrick (1853), Ann (1854) and William (1859).
