I have concluded that Jane C. was born a Burris, not Sapp. And since William T. Stigall died at age 29, it seems highly unlikely that he had more than the 4 identified children.
(I am a Stegall researcher, but not related to this William T. Stigall.)
From the following marriage information, and the 1850 census, it appears that Elizabeth was a widow (or divorcee) with 4 Burrus children when she married Daniel Sapp.Daniel Sapp may have legally adopted the Burris children, but even if he did, Burris would be correct "blood" surname for Jane C.

Civil War Pension depositions given by James B. Stigall (the son of Jane C. and William T. Stigall) give her maiden name as Sapp and include a reference to his uncle Isaac Sapp.
So it appears to me that the Burris children were raised by Daniel Sapp and started using Sapp as their surname.
